Monika Recipe of The Month
Beef Suya (Nigerian-Style)
A West African street-food classic — thinly sliced beef coated in yaji spice, grilled over charcoal until charred and juicy, served with fresh onions, tomatoes, and cucumber.
Instructions
- Prep the beef — Slice beef very thin (against the grain). Thin slices = tender suya.
- Make the yaji — Grind roasted peanuts into a fine powder. Mix with all spices and salt until evenly blended.
- Season the beef — Lightly oil the beef, then coat generously with yaji. Massage it in. Cover and marinate at least 1 hour (overnight is elite).
- Skewer up — Thread beef tightly onto skewers, pressing it flat as you go.
- Grill — Grill over hot charcoal for best flavour, or oven grill/broil at 220°C (430°F). Grill 3–4 minutes per side, basting lightly with oil, until slightly charred but juicy.
- Finish & serve — Sprinkle extra yaji immediately after grilling. Serve hot with sliced onions, tomatoes, and cucumber.
For the Beef
- 1 kg beef (sirloin, flank, or topside)
- Wooden skewers (soaked in water 30 min)
- 2 tbsp vegetable or groundnut oil
For the Suya Spice (Yaji)
- ½ cup roasted ground peanuts (skin off)
- 2–3 tbsp ground cayenne pepper (adjust heat)
- 1 tbsp paprika
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground cloves
- 1 tsp salt
- ½ tsp seasoning cube powder (optional but classic)
For Serving
- Sliced onions
- Tomatoes
- Cucumber
- Extra yaji on the side
